I don’t know why I haven’t thought of this earlier but I am going to blog about my family vacation in Iceland. We began our journey three days ago now and it is well underway. Day one was pretty much filled with air travel with a short but fun layover in Boston for some yummy clam chowder. We also did a quick walking tour of some historic sites like Sam Adams grave along with where the sons of liberty met to talk about the rights of man. The day ended with a late arrival to our very comfortable hostel in the capital city. The second day consisted of exchanging money, grocery shopping, and traveling to our second destination Bildudalur in the NW fjords. It’s a beautiful little town with no more than 50 buildings total. We enjoyed a yummy dinner of chicken, rice and stir-fried veggies and ended the night at a local and free hot spring down the road. (check out my Facebook for pictures of all of these places and scenery.) Today we travelled to some coastal cliffs further west where locals and visitors alike go to see local birds like the puffin. We are about to eat a fresh caught fish by the hostel workers boyfriend for dinner with potatoes, zucchini, onion and Icelandic beer. Two great things about Iceland are the dairy products and the water. All of the water in the country comes from natural springs. Plus all of the dairy products come from local cows and goats milk! Plus we heard 99% of the energy used in the country comes from a sustainable source. They used a lot of hydro electric here and we have seen several on the aides of the road already. More to come soon!
